Not only that, each beer uses its own specially selected yeast. Festival Summer Glory is a light-copper coloured ale, with an off-white head. It has a fresh floral character, due to the inclusion of dried elderflowers. Crystal and Cascade hop pellets, which you add halfway through fermentation, add a zesty, citrus aroma and flavour, balanced by a dry, bitter finish.
