7. Back Sweeten Wine

SUGAR WATER

This can be used to back sweeten wine in the case where it does not turn out to your liking. To be used before bottling.

 

2 cups finely granulated sugar

1 cup water

Zest from 1 lemon

 

Bring water with zest (grated peeling) of lemon to boil. With wooden spoon, stir water while slowly adding sugar. Continue stirring until all sugar is dissolved. Remove from heat and allow to cool. Pour through sieve (to remove zest) into sealable bottle. Store sealed in refrigerator. Use within four weeks to sweeten dry wine (no more than 1/4 cup per gallon) or sugar-deficient must.
